Ingredients:
2 ea. Zucchini
¼ cup Red Onion (minced)
2 cloves Garlic (minced)
¼ cup Parsley (chopped)
½ cup Flour
1 tbs. Red Pepper flakes
1tsp. Salt
Pinch Black Pepper
2qt oil for frying
Instructions:
1. Slice zucchini with mandolin or by hand, into very thin rounds.
2. Fine mince red onion, garlic and parsley.
3. In a mixing bowl combine flour, salt and black pepper.
4. Dredge zucchini in seasoned flour making sure all zucchini is coated.
5. Heat oil to 350 degrees.
6. Carefully place floured zucchini in hot oil.
7. Move zucchini around in oil to prevent sticking. Fry small batches for 2-3 minutes or until golden brown.
8. Remove from oil, place on cooling rack and season with salt.
9. Repeat until all zucchini is fried.
10. While hot, combine zucchini, minced red onion, crushed garlic, crushed red pepper and parsley into a large mixing bowl.
11. Mix thoroughly but gently avoid breaking zucchini rounds.
N’Dujadella Zucchini on Schiacciata:
1ea Tuscan Schiacciata Bread or Focaccia
1 cup Stracciatella
¼ lb. N’Dujadella (sliced thin)
1 cup of Zucchini Mulino
1. Cut Schiacciata bread in half.
2. Spread the stracciatella onto both sides of the bread.
3. Place the N’Dujadella on the bottom half of the bread.
4. Place the zucchini mulino onto the N’Dujadella.
5. Place the top half of the bread onto the sandwich.
